過去日子裡,衣索比亞的蜜處理一直未有為大家留下深刻印象,而這也是因為當地缺乏適當器材,去除果皮的機器多與水洗共用,受到大量的水沖刷,能保留下來去形成果膠的風味不足,因此處理過後的咖啡風味不足。不過,近年透過生豆商與產區的配合與投資,令部分處理廠能引進乾式處理機,以生產岀更高質和風味更豐富的蜜處理咖啡。

而這次我們所烘焙的 蜜處理衣索比亞 Sidama Bensa,正能展現岀精彩的桃駁李和橘子果感,中段甜感猶如甘蔗,尾韻帶優雅的紅茶感。

In the past, Ethiopian honey-processed coffee has not been well-received by coffee lovers. The reason being that Ethiopia doesn't have the right equipment to process honey-processed coffee. The machines used to remove the fruit skin are often used for washed coffee as well, and during the washing process, the beans are subjected to a lot of water. This washes away too much of the mucilage, which is essential for developing the honey flavor. As a result, the flavor of honey-processed coffee from Ethiopia has been lacking.

However, in recent years, the cooperation and investment of green bean traders and coffee producing regions have led to the introduction of dry processing machines. This has resulted in the production of higher quality and more flavorful honey-processed coffee.

The Ethiopian Sidamo Bensa honey-processed coffee that we are roasting this time is a perfect example of the potential of honey-processed coffee from Ethiopia. It exhibits wonderful flavors of nectarine, tangerine, and sugar cane.
