作為年輕的 Roastery,製作咖啡拼配豆對於我們來說也是一大挑戰 — 因為我們在烘焙上要處理兩款不同的咖啡豆,處理法的不同令其風味在烘焙中的風味走向也是不一樣。同時我們亦要考慮在比例上如何平衡兩款咖啡的風味,兩者如何影響整體的風味呈現等。整個過程十分漫長,但讓我們學習了更多。

而 SHIBA PUNCH 作為我們第一款的拼配豆,我們選擇了用單一產地同一豆種但不同處理法的咖啡作拼配。當水洗處理的咖啡帶明亮而乾淨的風味時,日曬處理的咖啡更帶豐富而醇厚的口感味道 — 因此兩者拼配後,你能感受到精緻果汁感,優雅的佛手柑香氣,同時有著蜜桃和甘蔗的豐郁甜感,會讓你聯想到一杯醇香的檸檬錫蘭紅茶!

 

As a young roastery, creating coffee blends is a significant challenge for us. We have to deal with two different coffee beans with different processing methods that make their flavors distinct when roasted. Additionally, we need to balance the flavors of the two coffees in proportion and their overall impact on the final flavor presentation. This process is lengthy, but it helps us learn more.

For our first bean blend, we chose SHIBA PUNCH, using coffee from the same variety but with different processing methods. Washed coffees are bright and clean while naturals are more rich and full-bodied. When blended, you get delicate juices, elegant bergamot aromas, and the rich sweetness of peach and sugar cane. It will remind you of a cup of mellow lemon Ceylon black tea!
