來自衣索比亞的 Alo Tomodachi 是一款在市場上十分少見的豆款 — 由世界咖啡沖煮冠軍 Tetsu Kasuya 和 ALO 的創辦人 Tamiru Tadesse 共同研發的處理法 雙重厭氧蜜處理。首先將成熟櫻桃放在密封桶內發酵兩天,然後再去皮和果肉,並將果肉和果汁收集,再放入桶內作為期兩天的二次發酵,最後再在非洲棚架上作日曬乾燥。這樣的處理法令最後岀來的咖啡帶有豐富的熱帶水果風味外,仍有著乾淨清晰的風味表現,並帶奶油般的口感。
The Alo Tomodachi from Ethiopia is a rare find on the market. It is processed using a Double Anaerobic Honey method, developed by World Coffee Brewers Champion Tetsu Kasuya and ALO founder Tamiru Tadesse. First, the ripe cherries are fermented for two days in a sealed tank. Then, the skin and pulp are removed, and the pulp and juice are collected. This mixture is then fermented for another two days in the tank before being dried in an African sun-dried rack. This process results in a coffee with rich tropical fruit flavors, as well as a clean and clear flavor profile with a creamy mouthfeel.
