兩年前,我們在香港遇上 Altieri 的 producer,而真正令我們一直持續採購的原因,是他們獨特的 Mosto 發酵方式。Mosto 指的是咖啡果實中的果汁 — 一般莊園多數會棄掉,但 Altieri 家族選擇將其重新加入發酵過程,讓咖啡在自身果實的環境中發展出更深層的風味。

這個批次名為 Ale,取自他們的孫女 Alessia,種植於 Volcán Barú 海拔 1820 米。

是一款讓烘焙師著迷的咖啡 —— 層次豐富、表現力強,甚至超越單一烘焙所能完全呈現的範圍。

A farm we’ve come to love more with each passing year.

Two years ago, we met Altieri’s producer in Hong Kong — and it was their Mosto process that stayed with us ever since. Mosto refers to the juice of the coffee cherry, something many farms would typically discard. The Altieri family chooses to ferment with it, allowing the coffee to develop deeper within its own fruit.

This lot, named Ale after their granddaughter Alessia, is grown at 1820 meters on Volcán Barú.

A true roaster’s obsession — layered, expressive, and far more complex than any single roast could fully capture.
