這是我們今年推出的第二款 Altieri 藝伎,之所以選擇它,是因為我們深深迷上了這個 Mossto 處理法。
在冷控、乾發酵的過程中,加入以櫻桃汁(mossto)回添的發酵液,讓風味更加集中,卻依然保持杯感的精準與乾淨度。
剛沖泡好時有 玫瑰、大樹菠蘿糖果、草莓的活潑發酵調;降溫後則轉為柑橘酸感,展現 Altieri 火山風土清晰而立體的性格。
對我們而言,這款咖啡就是 Mossto 的精彩標準 — 乾淨、層次分明、風味隨著溫度變化而不斷進化。
This is our second Altieri Gesha release this year, chosen to highlight a mossto process we’ve truly fallen in love with. During a cool, controlled dry fermentation, sweet cherry juice (mossto) is added back, concentrating flavour while keeping the cup clean and precise.
When hot, expect rose, jackfruit candy and strawberry with playful ferment notes.
As it cools, it settles into mandarin citrus revealing a clear expression of Altieri’s volcanic terroir.
For us, this is the benchmark for mossto — a clean, evolving cup with depth, clarity, and beautiful progression.
