ALO is one of the most talked-about experimental processing stations in Ethiopia in recent years, known for its meticulous small-batch selections and innovative processing methods. This anaerobic natural lot from Chilaka Mini is a prime example of their distinctive approach.
The cherries were selected from high altitudes above 2,100 meters and sealed for anaerobic fermentation to intensify and concentrate the fruity aroma. After fermentation, they were sun-dried, preserving a rich sweetness and bold fruit notes — expressive yet clean and refined.
